Zadar - Only Pure Gastro
An authentic culinary journey through Zadar County, shaped by local flavours, traditions and people.
Day 1 – Zadar | Arrival and Introduction to Mediterranean Cuisine
Arrival in Zadar and accommodation in a hotel. Free time for rest and an initial introduction to the city. A walk through the historic old town, encounters with the sea and the Mediterranean atmosphere introduce participants to the culinary and cultural context of the region. The scents of the sea, stone and Dalmatian cuisine lay the foundation for the gastronomic journey ahead.
Day 2 – Zadar | Market, Fish Market and Grilled Fish
After breakfast, a guided walk through Zadar with a professional local guide, who presents the city’s history and everyday life through stories and details. Special emphasis is placed on the city market and fish market, key meeting points for local producers, fishermen and buyers, where participants become familiar with seasonal ingredients that form the basis of Dalmatian cuisine.
After the city bustle, the programme continues in an ethno-village near Zadar, where hosts welcome participants with homemade liqueurs and a relaxed atmosphere. This is followed by the preparation of grilled fish, with explanations of techniques, fish selection and the importance of simplicity in Dalmatian gastronomy. The cooking show has a distinctly home-style character, and the experience concludes with a tasting of local wines.
Day 3 – Zadar Hinterland | The Tradition of Peka
The third day leads into the Zadar hinterland, towards Benkovac. A visit to historical landmarks and the old town reveals a different, more continental side of the region. The journey continues to a family farm or ethno-village, where participants are welcomed with a homemade aperitif and direct interaction with the hosts.
The central part of the day is dedicated to the preparation of traditional “peka”, a signature Dalmatian dish. The host explains its origin, cultural significance and preparation process, while participants actively take part in cooking. Lunch is complemented by wine tasting, accompanied by conversations about local culture, customs and everyday life.
Day 4 – Zadar Hinterland | Rural Life and the Traditional Farmers’ Meal
The fourth day is again dedicated to rural life and the traditional cuisine of the Zadar hinterland. After breakfast, arrival at a local family farm (OPG), where hosts warmly introduce participants to the preparation of a traditional farmers’ meal cooked in a cauldron.
Cooking unfolds slowly, accompanied by conversation, shared experiences and stories about traditional ways of life, working the land and community values. The flavours of the dishes are paired with tastings of homemade wines, while the entire day highlights simplicity, sustainability and the authenticity of Dalmatian gastronomy as part of everyday life.
